What is Kimchi?
It is a traditional Korean dish made from fermented red pepper and vegetables, especially bok choy. It means a vegetable soaked in liquid.
In Korea, kimchi is mostly served as a side dish, but it is also used as an ingredient in some dishes.
Kimchi usually consists of a mixture of vegetables and flavoring spices. The most familiar and common ingredient is Chinese cabbage, but there are regional and seasonal variations. Radish, garlic, chili peppers, spring onions, cuttlefish, clams, other seafood, fresh ginger, salt and sugar are used. Popular variations include kkakdugi made with radish and cucumber kimchi oisobaegi stuffed with hot spices.
